Hashbrown casserole recipe for [info]akamom  and anyone else who wanted it.

This really is best with fresh potatoes, but who has time for that? I use frozen hashbrowns.

6 or 7 med potatoes
1/2 cup butter
1 can cream of chicken soup
3 T grated onion
1 1/2 c grated cheddar cheese
1 pt sour cream
1 t salt 1/4 t pepper
 
Boil potatoes with jackets on about 10 mins. Cool, peel and grate.
 
Heat together & stir the other ingredients then mix with potatoes.
 
Can be poured into 2 dishes in order to freeze one for another dinner.
 
Top with 1 cup corn flakes mixed with 2 T butter.
 
Refrigerate overnight.
 
Bake 350 for 45 to 60 mins.
